  • The classic model sorts dishes by popularity and margin. It is still correct and it is only half the picture, because it cannot distinguish a dish nobody wanted from a dish nobody saw.

  • The view-to-order gap — considered often, ordered rarely — is the number a paper menu cannot produce, and it points at the description, the price or the photo rather than the dish.

  • Position confounds everything. Compare an item to itself before and after a change, never to an item sitting somewhere else on the menu.

  • Sales data comes from your own POS. No menu platform can supply it, so any analysis that needs both is a manual join you do once a month.
